Taquito Breakfast Rolls


6 Organic Eggs Scrambled

Mexican Blend Organic Cheese or Shredded Goat Gouda

Cooked Chicken Sausages (8)

1 pack of Siete Tortillas- room temperature

Layer on each tortilla:

Cheese, egg, 1 sausage.  Roll in parchement and then in plastic wrap.  Place in large ziplock and freeze.

Cook at 350 until golden brown and warmed through 10-15 minutes.  Serve with sour cream and salsa.

Pigs in a Muffin


1 batch of Birch Benders Paleo Pancake Mix (Prepare as directions on package expain)

1 package of Chicken Sausage cut in 1/2 inch pieces


Line mini muffin pan with mini muffin liners.  Place one sausage piece in each muffin tin.  Cover with pancake mix (Putting batter in a ketchup type bottle and squeezing it into each muffin tin simplifies this process greatly!)  Bake at 350 for about 10-15 mintues.  Enjoy!

Grain Free Cinnamon Rolls!



3⅛ c. almond flour

¼ tsp. baking soda

¼ tsp. sea salt

2 organic eggs

¼ c. coconut oil

¼ c. Sweet Luvs


4 T. grass fed butter or coconut oil

2 T. cinnamon

3 T. Sweet Luvs

*1/4-1/2 c. pecans if desired


3 T. grassfed butter or coconut oil

5 T. organic cream cheese or coconut butter

2 T. Powdered Swerve

*I did not thin out with coconut milk but you can


  1. Rolls:  Combine the almond flour, soda and salt in a bowl

  2. Lightly beat the eggs, oil and Luvs in a bowl and add to the flour mixture

  3. Mix until a smooth dough forms

  4. Place the dough on a piece of parchment paper and roll out to about a 9×13 rectangle (flour the rolling pin with almond flour if dough is sticking)

  5. Filling:

  6. Combine all of the ingredients in a bowl and mix well

  7. Spread onto the dough covering the entire rectangle

  8. Roll the dough as tight as you can, use the parchment paper to help you

  9. Cut the dough with a bread knife in about 1½ inch slices or larger if you want larger rolls but you will have to adjust cook time

  10. Bake at 350 on a greased cookie sheet for 10-13 minutes. They will start to get brown after about 10, but may still be too soft in the middle. They should be a bit soft and you certainly don’t want to over cook them.

  11. Let cool for 10 minutes before frosting (I, Kelli found this to be a bit too long, next time I will frost them after 5 minutes because I like melty frosting)

  12. Frosting:

  13. Combine all of the ingredients in a bowl and cream with a hand mixer until smooth

  14. Add coconut milk or almond milk until desired consistency

  15. Spread or drizzle the frosting over the rolls. I use a ziploc and fill it with the frosting, cut off a bit of the corner and squeeze to drizzle 

Lemon Poppy Seed Muffins- Grian Free


¼ c. Coconut Flour

1 tsp. Sea Salt

¼ tsp. Baking Soda

3 Organic Eggs

¼ c. Sweet Luvs

¼ c. Spectrum NON hydrogenated shortening

1 T. Lemon Zest

1 T. Poppy Seeds


  1. Stir flour, salt, soda in a small bowl and set aside. Whisk eggs, honey, shortening, lemon zest, and poppy seeds in a large bowl. When smooth add dry ingredients and mix well. Make into large muffins or mini, using appropriate sized muffin liners. Cook at 350 until a toothpick inserted comes out clean. Large 15 minutes or so, mini 8 minutes or so! So super yummy!

Veggie Cheese Omlette

2 Organic Eggs
A dash of milk (rice, almond, coconut, etc…)
¼ c. Goat Gouda Cheese , grated
Veggies of choice- diced fine (if you want them a bit soft sauté a bit prior or just use raw- that is what I do)
Sea Salt and Pepper to taste
  1. Place egg and milk in a bowl and whisk. Place mixture in an oiled griddle. Allow to bubble and then flip. Put cheese and veggies on ½ of omlette and fold other half over it. Top with cheese! When all is melted serve!

Turkey Sausage

1lb Ground Turkey
1 tsp Sea Salt
¼ tsp. Pepper (optional)
1 Organic Egg
1 tsp. Dried Oregano
1 tsp. Dried Thyme
  1. Put all ingredients into a large bowl. Using hand mix until all spices are evenly distributed in the meat. Form mixture into patties and fry until golden brown on each side. Lightly oil the skillet!

Optional frosting recipe below as well!
1½ c. Almond Flour
½ tsp. sea salt
½ tsp. baking soda
¼ c. coconut oil, softened
2 T. Sweet Luvs
2 organic eggs
1 tsp (or more I add a lot more, about 1 T.) cinnamon
*nuts/dried fruit of choice/Lilly's Chocolate Chips
  1. Mix flour, salt, baking soda, and cinnamon in a bowl. In large mixing bowl cream coconut oil, Luvs, and eggs. Add dry ingredients into wet and mix well. Add nuts and fruits of choice. Form into desired shapes- make sure they are all uniform. (Fun for Valentines Day make hearts, St. Patty's Day Shamrocks, etc...)
  2. Frosting:
  3. Cream together: 2T. coconut oil, 2T. Powdered Swerve, ½ tsp. vanilla, and a pinch of salt!
